  • 4 peaches, washed and cut into quarters
  • 80g rocket
  • 1 ball burrata cheese
  • 1 tbsp fresh pesto
  • Fresh basil
  • Olive oil
[time] 5 minutes
[method]
  1. Sear the peaches on a lightly oiled griddle pan until lightly browned – about 2-3 minutes each side
  2. On your plate, dress the rocket in the pesto and pop the burrata in the centre
  3. Lay the peaches around the burrata and drizzle with olive oil
  4. Sprinkle some salt and chopped basil to desired taste
